Fresh Farro Salad

This is one of those salads that I make often because it is so easy. All it requires is some chopping and cooking some farro. After that, your work is nearly done.

Ingredients:

  • 1 cup dry farro, cooked and strained.

  • 2 cups diced cucumber

  • 1.5 cups halved sweet cherry tomatoes

  • 1 cup garbanzo beans

  • 1/2 cup of diced red onion

  • 1 cup chopped cilantro

  • Juice of 1 lemon

  • 1/4 cup extra virgin olive oil

  • 1/2 teaspoon cumin

  • Salt to taste

  • Optional: 1 cup feta cheese

Instructions:

  1. This literally couldn’t be easier: combine all ingredients in a large bowl, and toss until everything is well-integrated.
