Fresh Farro Salad
This is one of those salads that I make often because it is so easy. All it requires is some chopping and cooking some farro. After that, your work is nearly done.
Ingredients:
1 cup dry farro, cooked and strained.
2 cups diced cucumber
1.5 cups halved sweet cherry tomatoes
1 cup garbanzo beans
1/2 cup of diced red onion
1 cup chopped cilantro
Juice of 1 lemon
1/4 cup extra virgin olive oil
1/2 teaspoon cumin
Salt to taste
Optional: 1 cup feta cheese
Instructions:
This literally couldn’t be easier: combine all ingredients in a large bowl, and toss until everything is well-integrated.
